Bio Restaurant

Our restaurant is the heart of the hotel – a place where hotel guests and external visitors come together. This is where Friedrich’s garden meets the kitchen: aromatic sauces are made from sun-ripened tomatoes and freshly picked herbs enhance the evening menu. What grows at 1,050 metres above sea level in the morning finds its way onto your plate just a few hours later – enjoyment could hardly be more genuine.

In addition to using our fresh organic products daily, we produce homemade jams, juices, compotes and pasta. Nothing goes to waste. We mainly source anything that isn’t grown in our garden from organic farmers based in Vinschgau/Val Venosta – cheese from the village dairy in Prad/Prato, the Englhorn cheese dairy (Schleis/Clusio) or from Robert Hohenegger (Langtaufers/Vallelunga). Apples from Gerd Wallnöfer (Prad/Prato), vegetables from Daniel Primisser (Prad/Prato) or Vinterra Mals/Malles, organic beef from Hans Waldner (Schleis/Clusio) or from the Ruepp family (Schluderns/Sluderno), and organic pork and lamb from Karl Thöni (Langtaufers/Vallelunga). For all guests

Our restaurant is open to the public every evening and Sunday lunchtime. Whether you’re staying with us or just coming to dine, you’re always warmly welcomed. We serve you regional organic cuisine à la carte: from traditional South Tyrolean dishes to creative interpretations using produce from Friedrich’s garden. The menu changes with the seasons.

As hotel guests, you can enjoy special delights from our sumptuous organic gourmet breakfast buffet available from 7.30 a.m. to 10 a.m. Breakfast is also available for external guests, subject to prior booking.

Homemade jams from our garden, compotes made using Gerd Wallnöfer’s apples, bacon and sausage products from our organic farmers, cheese from Robert Hohenegger, from the village dairy in Prad/Prato and the Englhorn dairy in Schleis/Clusio. Everything is certified organic, and everything is regional. And if you like, we’ll prepare your favourite egg dish fresh right in front of you.

For our hotel guests

For breakfast we serve a gourmet buffet with the best produce the region has to offer. What we don’t produce ourselves, we source from our organic partners. In the evening we delight you with a 4-course menu of your choice. You can choose between meat and vegetarian dishes. In the afternoon, cake and tea is there to be enjoyed. Everything is included in half board. Everything is certified organic, and everything is regional.

Customised cuisine

Gluten-free, lactose-free, vegetarian, vegan – we take into account your needs. Tell us your food intolerances or what you don’t want to eat. Our kitchen team will then prepare your meals accordingly. This applies to both hotel guests and à la carte diners.

From the garden to the plate

At 1,050 metres above sea level, we cultivate our organic garden with great dedication – a true paradise full of flavours and colours. What you see here is what later ends up on your plates, completely free from chemicals and grown very close to nature. 

What doesn’t come from our garden is sourced from organic farmers in Vinschgau/Val Venosta. We know them all personally. We know how they work.  This is transparency. This is the organic concept as we understand it. These are not anonymous suppliers – these are our neighbours. These are people who, like us, believe in regionality.

Our highlights

Distillates & Distillery

Two evenings a week are special: every Sunday we serve a gourmet menu, where each dish is refined with a distillate from Friedrich’s distillery. If you would like to, you can book an accompaniment of suitable spirits to go with each course.

Every Monday at 9 p.m. Friedrich invites our guests to a distillery tasting. In our ‘D(estillate) Lounge’, he will tell you how fruit is transformed into fine distillates and let you sample them. 13 quality brandies, 10 pomace spirits, 20 fine liqueurs and a gin – a variety that is second to none.
