For us, regionality is more than just an empty promise on the menu. We know our partner farms personally – their farms, their animals and their work. It’s people like Karl, Daniel, Gerd, Hans and Robert who ensure that only the finest food reaches your plate every day.
They’re not just any anonymous suppliers, but our neighbours from Vinschgau/Val Venosta, whose passion for the organic concept is just as great as ours. Short distances mean freshness. And freshness means excellent flavour. That is our promise.

Robert Hohenegger 01
Gamsegghof farm
At the end of the Langtauferertal valley, at 1,920 metres above sea level, lies the Gamsegghof farm. It has been owned by the Hohenegger family since 1702. Robert runs the dairy and produces raw milk cheese with his father Karl using goat’s, cow’s and sheep’s milk. “Straightforward, authentic and absolutely no gimmicks” – this is how Robert describes his cheese varieties. Certified organic for almost 20 years.

Traditional apple varieties from Prad/Prato
Over 20 old apple varieties grow on Gerd’s meadows in Prad am Stilfserjoch/Prato allo Stelvio. Crown Prince Rudolf, Canada Reinette, King of the Pippins – varieties that were almost forgotten. Gerd presses naturally cloudy apple juices from them, including his speciality: apple juice with coffee. By the way, Gerd is also Friedrich’s cousin. It’s all about family.

Waldnerhof farm in Schleis/Clusio
In the little village of Schleis/Clusio, everything revolves around livestock at Waldnerhof farm. Hans’ cattle, calves and pigs are out in the pasture from April until All Saints’ Day. He built almost everything himself, including the smokehouse to produce his home-smoked bacon. From nose to tail: all parts of the animal are used. Out of respect for the animal, and out of respect for nature.

Pig and sheep farmers from Langtaufers/Vallelunga
50 East Frisian dairy sheep and lambs, a boar, two sows and 20 young pigs – and in summer Karl herds 800 sheep from nine farmers. He has been sheep herding for 47 years. His sheep’s milk goes to the Gamsegghof farm, and the whey from the Gamsegghof dairy goes to his pigs. An almost closed-loop economy, just as it should be.

Vegetables from the Moleshof farm in Prad/Prato
At Moleshof farm, a lot revolves around root vegetables – carrots, parsnips, beetroot and later celery, plus seasonal cabbage and pumpkins. But Daniel’s greatest passion are potatoes, a wide range of variety of which he harvests from June to April. To keep the soil strong, he relies on crop rotation, with crops like spelt, polenta and black emmer. His second passion is for cold-pressed oils made from high-quality organic seeds, which retain all their nutrients thanks to particularly gentle processing.



How our collaboration began
Organic partners
It was over 20 years ago when Friedrich attended a course designed to bring innkeepers and farmers together. Back then, organic farming was a conviction. And it was precisely this conviction that the men sitting at that table shared. One of them was Karl Hohenegger from the Gamsegghof farm. Friedrich made him an offer: “If you run your farm organically, I’ll take a guaranteed amount from you on a regular basis.” A promise that still holds true today. These partnerships are based on trust. Short distances protect the environment. Personal relationships create transparency. And shared values create connections – across generations.
