It all starts with fruit. A Vinschgau/Val Venosta apricot or a Pala pear from Vinschgau/Val Venosta. Friedrich picks it up, smells it and checks the consistency. Only if everything is perfect does the fruit go into the mash. And then he starts doing what he loves best: distilling.

Thanks to decades of experience, Friedrich knows every move, every moment that decides whether a distillate will be good or exceptional. 13 premium brandies, 10 pomace spirits, 20 fine liqueurs and a gin – each one tells the story of Vinschgau/Val Venosta. Of the mountains. Of the fruits.

The Distillery

Time & care

Not the size. Not the quantity. It’s what Friedrich puts into it: time, care and skill. While others produce at a relentless pace, he gives a fine spirit the months it needs. From mashing to distillation and storage – nothing is skipped, nothing is rushed. You can taste the result.

Certified organic ingredients

Every fruit that comes into the distillery bears at least the EU organic certification or comes from wild foraging (for example, the rowan berries). The apples, the grapes for the pomace spirits and the herbs from our own garden. Short distances, full control. And the certainty that no chemicals make their way into the bottle.

An alternative to mass production

Friedrich distils in small batches. Each variety is individually mashed, individually distilled and individually stored. No assembly line work, no standardisation. Everything that goes into the bottle has its own character. Sometimes milder, sometimes more intense, always honest.

In wooden barrels and stainless steel vats

Most spirits are aged in large glass vessels or stainless steel barrels. This keeps the distillates and their flavour pure. Special products mature in wooden barrels, which adds colour and flavour. In the end, only one thing matters: that it tastes good.

Distillery tours

Anyone wanting to know how fruits are turned into distillates can join us on Mondays at 9.00 p.m. in our ‘D(estillate) Lounge’. Friedrich will personally explain every step to you: from mashing and preparing the mash to distillation. And why some spirits have to age for two years before they get really good.

The tasting lasts around two hours – and you’ll sample numerous different spirits. Don’t worry: no guest has ever had a headache the next day. If the quality is right, you can feel it. You can register for the tasting at Reception.

Distillery menu

Five courses. Four spirits or liqueurs. An evening that will help you understand why distillates are more than alcohol. The distillery menu is our way of showing how food and spirits complement each other. The pear brandy as an aperitif. The apricot brandy to accompany the main course. The cherry liqueur for dessert.

 

The menu is enhanced with our distillates and, for a surcharge, each course is accompanied by the appropriate distillate. Registration is open to all guests aged 18 and over.

Buying spirits

Whatever you try, you can also take away. All spirits, grappas and liqueurs are available at our hotel or in our online shop. They come in 0.2 or 0.5 litre bottles, beautifully packaged and labelled. Perfect as a souvenir or as a memento of an evening with us at Bio Hotel Panorama.

Friedrich’s range

What you can taste at Friedrich’s distillery is genuine variety – made by hand, with patience and a keen sense of quality. Not mass-produced goods, but what Vinschgau/Val Venosta produces and what Friedrich makes with it: sun-ripened fruits, select herbs and the best organic ingredients are used to create characterful brandies, fine grappas, harmonious liqueurs and a special gin.

 

Each spirit tells its own story – from the origin of the raw materials to the last sip. Honest, regional and distilled with passion.

Pomace spirits –
for all those who like it strong

  • Pomace is what remains after the grapes have been pressed. Shells, stones and sediment.
  • These are turned into pomace spirits – clear, intense and full of character. Ten different varieties, from mild to aromatic.
  • And what makes them so special: the pomace comes exclusively from our wine suppliers. That means you can enjoy the wine with your meal and finish with the matching pomace spirit made from the same grapes – a circle of pleasure that closes exquisitely.

Fine liqueurs –
Sweet, aromatic and versatile

  • Our fine liqueurs are little wonders of flavour: not too sweet, but finely balanced – with natural acidity, gentle bitters and the aromatic depth of real fruit.
  • Apricots, blueberries, strawberries, aronia berries and many more come from our garden or are wild-foraged.
  • A total of around 20 varieties await you: to give as gifts, to take home – or simply to enjoy yourself.
